When I'm running minimal lighting I go with the following:

(1) Eliminator E141 Octobar ($70)
(1) American DJ Warp TRI LED ($200 - grabbed mine off eBay for $75)
(1) American DJ Mobile Beam (you can find these on eBay at about $150)

I really like this setup, but may be a bit too much movement for weddings. You might consider going with a Chauvet Vue 3.1 ($200ish) instead of the Warp or Beam.

I prefer a nice simple light system for weddings. 1 Chauvet Colorstrip (Or ADJ Megapixel LED) and a Martin Acrobat (Or EFX-500/600).

The acrobats pop up on eBay from time to time. I have 2 and absolutely love them.

This system sets up in under 5 minutes, looks GREAT and will fill almost any venue that will host a wedding.
